PROPOSAL


WHITE VELVET CHEESECAKE
WITH STRAWBERRY RUM SAUCE


Jenn made this for Glen to celebrate Valentine's Day. The rum was Glen's idea to help make the cake more "festive".

This cheesecake was so out of the world good that Glen was overcome with joy and promptly popped the question - right in the kitchen!

"I must secure this woman, lest I never taste such cheesecake again!" thought Glen.

And the rest is history...



Ingredients
2 packages (250g each) cream cheese softened
1/3 cup sugar
1 tsp lemon juice
6 squares (1 box) Baker's white chocolate, melted
3/4 cup sour cream
2 large eggs
1 tsp vanilla

Sauce
1 box frozen strawberries in syrup
2 tbsp cornstarch
2 tbsp rum

Directions
Beat cream cheese, sugar and lemon juice until blended and smooth
Add chocolate, sour cream, eggs and vanilla
Beat until well combined.
Pour batter into a lightly greased 8 1/2 inch springform pan; smooth top.
Bake at 450 degrees for 10 minutes.
Reduce heat to 250 degrees and bake 35-40 minutes longer.

Run sharp knife along side and let cool completely before removing side.

Refrigerate overnight, at least five hours.

Top with strawberry rum sauce.


Topping
Thaw strawberries.
Place strawberries in saucepan.
Mix cornstarch with a few tablespoons of strawberry juice
Add cornstarch mixture to strawberries and bring to a boil.
Cook until thick and bubbly.
Add rum and stir.

Cool sauce and pour over cheesecake.
