            Pattianne's Timetable For Roasting Turkey



 Oven temperature 400 F. for first 1/2-3/4 hrs. then lower oven to 
 325 F.
 Times for Stuffed turkey:

 6-8 lb.----------- 3 to 3 1/2 hours

 8-12 lb.---------- 3 1/2 to 4 1/2 hours

 12-16 lb.--------- 4 1/2 to 5 1/2 hours

 16-20 lb.--------- 5 1/2 to 6 1/2 hours

 20-24 lb.--------- 6 1/2 to 7 hours

 Any Larger "fake it":)! 

 NOTE: I cook my stuffed turkey in pre-heated oven at 400 F. for 
 approx 1/2-3/4 hrs. then lower oven temperature to 325 F. based on 
 a 12-24 lb stuffed turkey. Spread butter or margarine, salt and 
 pepper over the whole turkey; I use foil wrap on bottom of 
 roasting pan with dabs of butter; cover turkey with foil, basting 
 often. Last half hour remove foil for browning and crispy top.

How to Carve a
Roast Turkey
 The secret of perfect carving is to use a sharp carving knife or 
 an electric knife. Cook fresh turkey at 325 F. for 20 minutes a 
 pound if well stuffed, uncovered, or use a pop-up thermometer.
 After removing the turkey from the oven, let it stand for 15 to
 20 minutes before carving.  Cover with foil to keep it warm.

1. Pull drumstick away from body. Cut skin and meat between leg and body. With knife tip, cut through the joint, separating leg from body.

2. Cut through joint to separate drumstick from thigh. Slice pieces parallel to bone. Make a horizontal cut into the breast above each wing.

3. Start at outer edge of one side of breast. Cut thin, even slices from the top of the breast down to the horizontal cut. Repeat on other side.
