Don't try to toast the pine nuts in the oven - they burn fast, and pine nuts aren't exactly cheap. It took us 3 tries before we got them toasted properly.
While I was busy deboning the birds, Anne and Sherry were making the spice mixture and the stuffing. We had a problem with the stuffing recipe - or rather, I had a problem, because I don't eat red meat and the recipe called for sausages. At first I thought I could go to Kensington Market and pick up some spicy chicken sausages (yummy stuff) but Anne reported that they didn't have any.
So instead, we used this recipe for sausages, substituting ground chicken for the ground mammals. It worked fine, but it could have used some more spiciness.
We mixed that stuff in with the rest of the stuffing mix, and then tried our best to not eat it straight out of the bowl - Man, that's some tasty stuffing!
So now the stuffing is ready, the spice mix is ready, and the birds are deboned.
