Here's how to put the beast together:
Lay the turkey flat, skin side down. Rub in 4 tablespoons of the spice mix, then evenly spread 5 cups of the stuffing over the bird. Lay the duck, skin side down, on top of the turkey. Rub in 2 tablespoons of the spice mix, and spread 3 cups of stuffing to cover the duck. Then the chicken goes on, skin side down. Rub in 2 tablespoons of the spice mix and spread on the rest of the stuffing.
It sounds easy because it is easy.

This is the halfway point, with the turkey spiced and stuffed, and the duck lying flat on top, ready to be rubbed. The last picture is what the thing looked like just before we folded it. It was about 3 inches thick.
