Oil & Vinegar Dressing

DESCRIPTION: Makes a great House Dressing

YIELD: 10 LITER 


67 oz Onion Cooking fine Chopped
2 oz Garlic\Chopped\In oil
1.5 oz Black Pepper\Whole corns fresh cracked
2 oz Mustard\Grey Poupon
1 oz Basil\Rubbed
0.5 oz Thyme\Ground
0.75 oz Marjoram Leaf\Dry
3 L Vinegar\Red Wine Heated but not boiled
5 L Vegetable Oil
3 oz Salt
1 tsp Tabasco Sauce
3 tbl Worcestershire Sauce
Method:
  1. Add onions, mustard, salt, pepper, all the herbs, garlic, Tabasco and Worcestershire sauce to mixing bowl.
  2. Add the hot vinegar and stir well.
  3. Add the warm oil. Let rest at room temperature for 3 hrs.
